Seriola rivoliana - known to sushi chefs as Kanpachi (間八) is more commonly known as Amberjack. Kanpachi is a tropical pelagic whitefish found throughout the South Pacific. The flesh is known to be firm but also rich and buttery.
Kanpachi is very easy to work with. The rich and firm flesh makes it ideal for Sushi and Sashimi. It's also great for grilling and pan frying with melt in your mouth textures!
