Pepper Tuna Tataki

A simple pan-seared method perfect for serving tuna and other kind of fish. The light sear gives additional texture while preserving the raw flavor of the fish. All you have to do for this easy dish is to lightly pan fry the tuna slab on all four sides for around 20-30 seconds. Then slice anywhere between 1/4 and 1/2 of an inch. Slightly drizzle with ponzu to add a dash of refreshing citrus taste which further brings out the tuna's flavor. Garnish with scallions, cilantro, citrus slices, or shiso to add a nice contrast of color.
Preparation Method:
1. In my case here, I divided the block lengthwise so after cooking, sashimi slices can be cut across the grain.
2. Heat a skillet with about 2 tablespoon of oil
3. Cover the tuna with coarse ground black pepper.
4. Prepare a bowl of ice water on the side
5. Gently sear the tuna for 20-30s on the sides.
6. After cooking, dip the seared tuna in the ice water for about 5 minutes
7. Remove from ice water, dry with paper towel and cut into sashimi slices.
8. Plate, garnish, drizzle with ponzu if you wish and serve.
